Savory Asian delight where seasoned minced meat, often lamb or beef, is molded onto skewers and grilled or roasted to perfection, resulting in smoky, succulent, and flavorful cylindrical kebabs.

Preparation & Cooking Time: 1 hour to 1 hour 20 minutes

Ingredients:

  • 500 grams minced meat (chicken, lamb, or beef)
  • 1 large onion, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 2 green chilies, finely chopped
  • 2 tablespoons chopped cilantro (coriander leaves)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons gram flour (besan)
  • 1 tablespoon oil
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

  1. Preparation (15 minutes):
    • In a large mixing bowl, combine minced meat, chopped onion, ginger-garlic paste, green chilies, cilantro, ground cumin, ground coriander, red chili powder, turmeric powder, garam masala, salt, gram flour, and oil.
    • Mix everything thoroughly to form a uniform mixture.
  2. Marination (at least 30 minutes):
    • Cover the bowl with plastic wrap and let the mixture marinate in the refrigerator for at least 30 minutes. This allows the flavors to meld and enhances the taste of the kebabs.
  3. Skewering (10 minutes):
    • Take the marinated mixture out of the refrigerator and, using wet hands, shape it into cylindrical kebabs around the soaked wooden skewers.
  4. Cooking (15 minutes):
    • Preheat your grill or oven to medium-high heat.
    • Grill the kebabs for about 6-8 minutes on each side or until they are fully cooked and have a nice char on the outside. You can also cook them in a pan on the stovetop.
  5. Serving:
    • Serve the Seekh Kebabs hot with mint chutney, yogurt sauce, or your favorite dipping sauce.
