Saag Bhaji is a delicious Indian dish made with spinach and a variety of leafy green vegetables, typically seasoned with aromatic spices.

Ingredients:
- 500g mixed leafy greens (spinach, mustard greens, kale, collard greens, etc.)
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, chopped (adjust according to your spice preference)
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon red chili powder (adjust according to your spice preference)
- Salt to taste
- 2 tablespoons oil (vegetable or mustard oil)
Instructions:
- Prepare the Greens:
- Wash the leafy greens thoroughly and chop them finely.
- Blanch the Greens:
- Boil water in a large pot, add a pinch of salt, and blanch the chopped greens for 2-3 minutes.
- Drain the water and immediately transfer the greens to a bowl of cold water to retain their green color.
- Drain again and blend the greens into a coarse paste. Set aside.
- Cooking:
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Allow them to splutter.
- Add finely chopped onions and sauté until they turn golden brown.
- Add Aromatics:
- Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
- Spice it Up:
- Add turmeric powder, coriander powder, cumin powder, and red chili powder. Mix well and cook for another minute.
- Tomatoes:
- Add chopped tomatoes and cook until they become soft and the oil begins to separate.
- Add Greens:
- Add the blended greens paste and mix well. Cook for 5-7 minutes, stirring occasionally.
- Season and Simmer:
- Season with salt and let the Saag Bhaji simmer for another 10-15 minutes, allowing the flavors to meld.
- Finish:
- Check the consistency. If it’s too thick, you can add a little water. Adjust salt and spices according to your taste.
- Serve:
- Once the Saag Bhaji is cooked to your liking, serve it hot with roti, naan, or rice.
