Saag Bhaji is a delicious Indian dish made with spinach and a variety of leafy green vegetables, typically seasoned with aromatic spices.

Ingredients:

  • 500g mixed leafy greens (spinach, mustard greens, kale, collard greens, etc.)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, chopped (adjust according to your spice preference)
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • Salt to taste
  • 2 tablespoons oil (vegetable or mustard oil)

Instructions:

  1. Prepare the Greens:
    • Wash the leafy greens thoroughly and chop them finely.
  2. Blanch the Greens:
    • Boil water in a large pot, add a pinch of salt, and blanch the chopped greens for 2-3 minutes.
    • Drain the water and immediately transfer the greens to a bowl of cold water to retain their green color.
    • Drain again and blend the greens into a coarse paste. Set aside.
  3. Cooking:
    • Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Allow them to splutter.
    • Add finely chopped onions and sauté until they turn golden brown.
  4. Add Aromatics:
    • Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
  5. Spice it Up:
    • Add turmeric powder, coriander powder, cumin powder, and red chili powder. Mix well and cook for another minute.
  6. Tomatoes:
    • Add chopped tomatoes and cook until they become soft and the oil begins to separate.
  7. Add Greens:
    • Add the blended greens paste and mix well. Cook for 5-7 minutes, stirring occasionally.
  8. Season and Simmer:
    • Season with salt and let the Saag Bhaji simmer for another 10-15 minutes, allowing the flavors to meld.
  9. Finish:
    • Check the consistency. If it’s too thick, you can add a little water. Adjust salt and spices according to your taste.
  10. Serve:
    • Once the Saag Bhaji is cooked to your liking, serve it hot with roti, naan, or rice.
