Saag Aloo is a delicious Indian dish made with spinach (saag) and potatoes (aloo) seasoned with a blend of spices.

Ingredients:
- 3 cups fresh spinach, washed and chopped
- 2 medium-sized potatoes, peeled and diced
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, finely chopped (adjust to taste)
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cayenne pepper or red chili powder (adjust to taste)
- Salt to taste
- 2 tablespoons oil (vegetable or mustard oil)
Instructions:
- Prepare Ingredients:
- Wash and chop the spinach.
- Peel and dice the potatoes into bite-sized cubes.
- Finely chop the onion, tomatoes, and green chilies.
- Mince the garlic and grate the ginger.
- Boil Potatoes:
- Boil the diced potatoes in salted water until they are just tender. Be careful not to overcook them. Drain and set aside.
- Saute Potatoes:
- Heat oil in a pan over medium heat. Add the boiled potatoes and sauté until they turn golden brown. Remove them from the pan and set aside.
- Tempering:
- In the same pan, add a bit more oil if needed. Add cumin seeds and mustard seeds. Let them splutter.
- Add Aromatics:
- Add chopped onions, minced garlic, and grated ginger. Sauté until the onions turn golden brown.
- Add Tomatoes:
- Add chopped tomatoes and green chilies. Cook until the tomatoes are soft and the oil begins to separate.
- Spice it Up:
- Add turmeric powder, coriander powder, cayenne pepper (or red chili powder), and salt. Mix well and cook for a couple of minutes.
- Add Spinach:
- Add the chopped spinach to the pan. Stir well and cook until the spinach wilts.
- Combine with Potatoes:
- Add the sautéed potatoes to the spinach mixture. Mix everything well and let it simmer for a few minutes.
- Serve:
- Once the flavors have melded together, and the potatoes and spinach are well-cooked, your Saag Aloo is ready to be served.
- Garnish:
- Optionally, garnish with a drizzle of fresh lemon juice or a dollop of yogurt before serving.
