Saag Aloo is a delicious Indian dish made with spinach (saag) and potatoes (aloo) seasoned with a blend of spices.

Ingredients:

  • 3 cups fresh spinach, washed and chopped
  • 2 medium-sized potatoes, peeled and diced
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, finely chopped (adjust to taste)
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cayenne pepper or red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons oil (vegetable or mustard oil)

Instructions:

  1. Prepare Ingredients:
    • Wash and chop the spinach.
    • Peel and dice the potatoes into bite-sized cubes.
    • Finely chop the onion, tomatoes, and green chilies.
    • Mince the garlic and grate the ginger.
  2. Boil Potatoes:
    • Boil the diced potatoes in salted water until they are just tender. Be careful not to overcook them. Drain and set aside.
  3. Saute Potatoes:
    • Heat oil in a pan over medium heat. Add the boiled potatoes and sauté until they turn golden brown. Remove them from the pan and set aside.
  4. Tempering:
    • In the same pan, add a bit more oil if needed. Add cumin seeds and mustard seeds. Let them splutter.
  5. Add Aromatics:
    • Add chopped onions, minced garlic, and grated ginger. Sauté until the onions turn golden brown.
  6. Add Tomatoes:
    • Add chopped tomatoes and green chilies. Cook until the tomatoes are soft and the oil begins to separate.
  7. Spice it Up:
    • Add turmeric powder, coriander powder, cayenne pepper (or red chili powder), and salt. Mix well and cook for a couple of minutes.
  8. Add Spinach:
    • Add the chopped spinach to the pan. Stir well and cook until the spinach wilts.
  9. Combine with Potatoes:
    • Add the sautéed potatoes to the spinach mixture. Mix everything well and let it simmer for a few minutes.
  10. Serve:
    • Once the flavors have melded together, and the potatoes and spinach are well-cooked, your Saag Aloo is ready to be served.
  11. Garnish:
    • Optionally, garnish with a drizzle of fresh lemon juice or a dollop of yogurt before serving.
