Vegetarian Rogan Josh:

Ingredients:

  • 2 cups mixed vegetables (such as potatoes, carrots, peas, and cauliflower), chopped
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 1 tsp ginger-garlic paste
  • 1 tsp ground turmeric
  • 2 tsp ground coriander
  • 1 tsp chili powder (adjust to taste)
  • 1 tsp paprika
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a pan, add cumin seeds, cardamom pods, cloves, and cinnamon stick. Let them sizzle for a few seconds.
  2. Add finely chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for another minute.
  4. Add turmeric, ground coriander, chili powder, and paprika. Cook the spices for 2 minutes, stirring continuously.
  5. Add pureed tomatoes and cook until the oil separates from the masala.
  6. Stir in yogurt and cook for another 2-3 minutes.
  7. Add mixed vegetables, salt, and mix well. Cover and cook until the vegetables are tender.
  8. Sprinkle garam masala and garnish with fresh coriander leaves.

Chicken Rogan Josh:

Follow the same recipe as above, replacing mixed vegetables with boneless chicken pieces. Adjust the cooking time accordingly to ensure the chicken is thoroughly cooked.

Lamb Rogan Josh:

Ingredients:

  • 500g lamb, cut into cubes
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup plain yogurt
  • 3 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 4 green cardamom pods
  • 4 cloves
  • 2-inch cinnamon stick
  • 1 tsp ginger-garlic paste
  • 1 tsp ground turmeric
  • 2 tsp ground coriander
  • 1 tsp chili powder (adjust to taste)
  • 1 tsp paprika
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Follow the same instructions as for Vegetarian Rogan Josh, replacing vegetables with lamb cubes. Adjust the cooking time to ensure the lamb is tender.
