🍛 Easy & Customisable Jalfrezi Recipe – A Bold & Flavourful Dish

🛒 Ingredients

🍗 For the Jalfrezi:

  • 1 kg chicken, boneless and cut into bite-sized pieces (or use lamb/vegetables)
  • 2 large onions, thinly sliced
  • 2 bell peppers (any colour), thinly sliced
  • 2 tomatoes, chopped
  • 2 green chillies, finely chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder (adjust to taste)
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • Salt to taste
  • Cooking oil
  • Fresh coriander leaves, chopped (for garnish)

🥕 Vegetables (Optional):

  • 2 cups mixed vegetables (such as bell peppers, carrots, peas, cauliflower, and beans), chopped
  • 1 cup paneer, cubed (optional)

👨‍🍳 Instructions

🥣 1. Marinate the Chicken

  • In a bowl, mix the chicken with half of the ginger-garlic paste, turmeric powder, red chilli powder, and salt.
  • Let it marinate for at least 30 minutes.

🔥 2. Cook the Chicken

  • Heat oil in a pan over medium heat.
  • Add the marinated chicken and cook until golden brown.
  • Remove the chicken from the pan and set aside.

🧅 3. Prepare the Base

  • In the same pan, add more oil if needed.
  • Add cumin seeds and let them splutter.
  • Add sliced onions and sauté until golden brown.

🌶️ 4. Add Aromatics

  • Stir in the remaining ginger-garlic paste and chopped green chillies.
  • Sauté for a couple of minutes until the raw smell disappears.

🥄 5. Add Spices

  • Add coriander powder, cumin powder, and garam masala.
  • Cook for a minute to release the flavours.

🫑 6. Add Vegetables

  • Stir in the sliced bell peppers and cook until slightly tender.
  • Add chopped tomatoes and cook until soft, with oil separating from the masala.

🍗 7. Combine with Chicken

  • Return the cooked chicken to the pan.
  • Mix well to combine the chicken with the spices and vegetables.

🍲 8. Simmer

  • Add salt to taste and let the curry simmer for 10–15 minutes.
  • Allow the flavours to meld and the chicken to absorb the spices.

🌿 9. Garnish and Serve

  • Garnish with fresh coriander leaves.
  • Serve hot with rice or naan.
