Jalfrezi dish known for its bold and flavorful combination of bell peppers, onion, tomatoes and spices.

Ingredients:

  • 1 kg chicken, boneless and cut into bite-sized pieces (you can also use lamb or vegetables)
  • 2 large onions, thinly sliced
  • 2 bell peppers (any color), thinly sliced
  • 2 tomatoes, chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Cooking oil

Vegetables:

  • 2 cups mixed vegetables (such as bell peppers, carrots, peas, cauliflower, and beans), chopped
  • 1 cup paneer (optional), cubed

Instructions:

  1. Marinate the Chicken:
    • In a bowl, mix the chicken pieces with half of the ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 30 minutes.
  2. Cooking the Chicken:
    • Heat oil in a pan over medium heat. Add the marinated chicken and cook until it turns golden brown. Once cooked, remove the chicken from the pan and set it aside.
  3. Prepare the Base:
    • In the same pan, add a bit more oil if needed. Add cumin seeds and let them splutter. Add sliced onions and sauté until they become golden brown.
  4. Add Aromatics:
    • Add the remaining ginger-garlic paste and chopped green chilies. Sauté for a couple of minutes until the raw smell disappears.
  5. Spices:
    • Add coriander powder, cumin powder, and garam masala. Cook for a minute to let the spices release their flavors.
  6. Add Vegetables:
    • Add sliced bell peppers and cook until they are slightly tender. Stir in the chopped tomatoes and cook until they are soft and the oil begins to separate.
  7. Combine with Chicken:
    • Return the cooked chicken to the pan. Mix well to combine the chicken with the spices and vegetables.
  8. Simmer:
    • Add salt to taste and let the curry simmer for 10-15 minutes, allowing the flavors to meld and the chicken to absorb the spices.
  9. Garnish and Serve:
    • Garnish with chopped fresh coriander leaves. Serve hot with rice or naan.
