Jalfrezi dish known for its bold and flavorful combination of bell peppers, onion, tomatoes and spices.

Ingredients:
- 1 kg chicken, boneless and cut into bite-sized pieces (you can also use lamb or vegetables)
- 2 large onions, thinly sliced
- 2 bell peppers (any color), thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Cooking oil
Vegetables:
- 2 cups mixed vegetables (such as bell peppers, carrots, peas, cauliflower, and beans), chopped
- 1 cup paneer (optional), cubed
Instructions:
- Marinate the Chicken:
- In a bowl, mix the chicken pieces with half of the ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 30 minutes.
- Cooking the Chicken:
- Heat oil in a pan over medium heat. Add the marinated chicken and cook until it turns golden brown. Once cooked, remove the chicken from the pan and set it aside.
- Prepare the Base:
- In the same pan, add a bit more oil if needed. Add cumin seeds and let them splutter. Add sliced onions and sauté until they become golden brown.
- Add Aromatics:
- Add the remaining ginger-garlic paste and chopped green chilies. Sauté for a couple of minutes until the raw smell disappears.
- Spices:
- Add coriander powder, cumin powder, and garam masala. Cook for a minute to let the spices release their flavors.
- Add Vegetables:
- Add sliced bell peppers and cook until they are slightly tender. Stir in the chopped tomatoes and cook until they are soft and the oil begins to separate.
- Combine with Chicken:
- Return the cooked chicken to the pan. Mix well to combine the chicken with the spices and vegetables.
- Simmer:
- Add salt to taste and let the curry simmer for 10-15 minutes, allowing the flavors to meld and the chicken to absorb the spices.
- Garnish and Serve:
- Garnish with chopped fresh coriander leaves. Serve hot with rice or naan.
