Dupiaza is full of flavour, this Indian dish is known for its rich and aromatic onion-based curry. This is a mild curry the whole family will love no matter your level of spice tolerance.

Ingredients:
- 500g chicken, cut into pieces (you can also use lamb or vegetables)
- 4 large onions, thinly sliced
- 2 tomatoes, chopped
- 2 tablespoons ginger-garlic paste
- 1/2 cup plain yogurt
- 2 teaspoons garam masala
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 cup vegetable oil
- 2 tablespoons ghee (clarified butter)
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
- Marinate the Chicken:
- In a bowl, mix the chicken pieces with yogurt, ginger-garlic paste, turmeric, coriander, cumin powder, red chili powder, and salt. Allow it to marinate for at least 30 minutes (the longer the best and for best results leave overnight).
- Cooking the Onions:
- Heat vegetable oil in a pan over medium heat. Add thinly sliced onions and cook until they turn golden brown and caramelized. This may take about 15-20 minutes. Stir occasionally.
- Add Spices:
- Once the onions are caramelized, add garam masala, ground cinnamon, and ground cardamom. Stir well to combine.
- Cook Chicken:
- Add the marinated chicken to the pan and cook until the chicken is browned on all sides.
- Tomatoes:
- Add chopped tomatoes to the pan and cook until they become soft and the oil starts to separate from the masala.
- Simmer:
- Reduce the heat to low, cover the pan, and let the chicken cook in its own juices for about 15-20 minutes. Stir occasionally to prevent sticking.
- Check for Doneness:
- Ensure the chicken is fully cooked. The internal temperature should reach 165°F (74°C).
- Garnish:
- Once the chicken is cooked, add ghee and stir well. Garnish with freshly chopped cilantro.
- Serve:
- Serve the Chicken Dupiaza hot with naan, rice, or your choice of bread.
