Very popular south Asian dish made with potatoes and a blend of spices. It’s a flavorful and satisfying side dish that can be enjoyed with rice, naan, or other breads.

Ingredients:
- 4 medium-sized potatoes, peeled and cubed
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro (coriander leaves) for garnish
Instructions:
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
- Add chopped onions and sauté until they become translucent.
- Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add turmeric powder, red chili powder, ground coriander, ground cumin, and salt. Mix well.
- Add chopped tomatoes and cook until they become soft and the oil begins to separate from the masala.
- Add the cubed potatoes to the pan and mix well, ensuring the potatoes are coated with the masala.
- Cover the pan with a lid and let the potatoes cook on low to medium heat. Stir occasionally to prevent sticking.
- Cook until the potatoes are tender. You can sprinkle a little water if the mixture is too dry or if the potatoes are sticking to the pan.
- Once the potatoes are cooked, add garam masala and mix well.
- Garnish with fresh cilantro (coriander leaves).
- Serve Bombay Aloo hot with naan, rice, or your favorite Indian bread.
