Very popular south Asian dish made with potatoes and a blend of spices. It’s a flavorful and satisfying side dish that can be enjoyed with rice, naan, or other breads.

Ingredients:

  • 4 medium-sized potatoes, peeled and cubed
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro (coriander leaves) for garnish

Instructions:

  1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
  2. Add chopped onions and sauté until they become translucent.
  3. Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
  4. Add turmeric powder, red chili powder, ground coriander, ground cumin, and salt. Mix well.
  5. Add chopped tomatoes and cook until they become soft and the oil begins to separate from the masala.
  6. Add the cubed potatoes to the pan and mix well, ensuring the potatoes are coated with the masala.
  7. Cover the pan with a lid and let the potatoes cook on low to medium heat. Stir occasionally to prevent sticking.
  8. Cook until the potatoes are tender. You can sprinkle a little water if the mixture is too dry or if the potatoes are sticking to the pan.
  9. Once the potatoes are cooked, add garam masala and mix well.
  10. Garnish with fresh cilantro (coriander leaves).
  11. Serve Bombay Aloo hot with naan, rice, or your favorite Indian bread.
